Non entro qui a raccontarvi di metodologie e tecniche che solo il libro può spiegarvi in modo chiaro ed esaustivo. Voglio solo raccontarvi del perchè ritengo che questo libro debba essere presente nelle vostre librerie, in bella vista.

Ingredients for six persons:

2 sausages 300 gr. frozen mixed mushrooms
10 sheets of lasagne ready
a smoked provolone fresh grated Parmesan

Ho preparato il pandispagna e la crema due giorni prima, l'indomani l'ho spellato, tagliato, bagnato e farcito con la crema. Il giorno successivo mi sono dedicata alla decorazione.

1 tuorlo d'uovo
latte
60 gr. circa di prosciutto cotto
120 gr. circa di formaggio edamer
rosmarino tritato finemente

Stendere la sfoglia sul piano di lavoro e spennellarla con un'emulsione di tuorlo e latte.
Coprire con il formaggio in scaglie o a fette sottili e sopra di esse il prosciutto cotto. Cospargere di rosmarino e arrotolare strettamente la sfoglia. Per quanto riguarda il tempo d’affumicatura è molto soggettivo, non è un caso che anche le fabbriche si distinguano l’una dall’altra anche per le diverse affumicature date ai loro salmoni…io ho seguito il consiglio di Cristiano e fatto affumicare tra i 45 e i 60 minuti, anche se c'è chi lo lascia anche 12 ore nel forno, avendo però l’accortezza di mettere tra la ciotola con la segatura e la griglia dove sono i filetti un’altra griglia con un contenitore con del ghiaccio. Ingredients for 6:

prezzemolo
aglio
1 cucchiaio di pecorino
pangrattato
sale
pepe
olio extravergine

Lavare ed asciugare bene i calamari. Nel frattempo tritare il prezzemolo e l'aglio e mischiarlo in una ciotola, con gli altri ingredienti.
Preparare una teglia da forno e versarvi dell'olio extravergine, disporre i calamari ed aggiungere il condimento. Mischiare bene con le mani alzando e girando i calamari in modo di distribuire bene il condimento ( come si fa' per le patate al forno)
Infornare a 200° per circa 25 minuti.
